This isn’t just a business to us. It’s our purpose, our passion, and our mission. It literally has our names on it! It’s our contribution to the world and to society, starting with those closest around us: our employees, our guests, and our local community. These are both lofty long-term and short-term goals, to keep us on the right track, for daily improvement. These are our values; what’s most important to us.
It was important for us to put this into words before we even open, so you know who we are as a company and where we are striving to reach, one day at a time.
What are we doing now to achieve those goals, to put actions behind these words?
•Working with local purveyors
•Supporting other local businesses with our purchases
•Teaming up with forward thinking/acting companies like Amavida for our coffee and King's Table Farm for chicken and eggs
•Setting menu prices and tipping systems to set ALL our employees up for success (FOH, BOH, FT, & PT)
•Planning for discounts for beach cleanups or having Phone Down Framily Fridays, so we can encourage things like taking care of our environment and real quality time through social connection
•Cutting down on our personal home budget to more fairly share any profits with our employees
•Putting numbers on our menu for ease of ordering for people who don’t speak English or need other special accommodations. We will have plans in place to assist any customer
•Having our nutritional information already logged into MyFitnessPal, and offering over half our menu as real vegetarian options, to assist guests tracking their health journey and nourishing their bodies in a tasty way
•Working with local charities to assist however we can— donating leftover food, spreading awareness, etc.

We are a husband & wife team with the goal of bringing you the comfort of home (Destin, Florida) with the creativity of the world. We both grew up living in Cental America, Europe, and Asia, but finally both settled down right here near the beautiful beaches of the Florida Panhandle.
Phillip is the Executive Chef and Jess is the Culinary Fairy/Manager/Taste Tester/Server/Advertising Specialist/Support Staff/Health Enthusiast/ & Proud Wife.
Through Jess' health journey, Chef Phillip has met the challenge and grown exponentially in the areas of vegan, vegetarian, dairy-free, gluten-free, and nightshade-free cooking, as well as catering to other special dietary needs and allergies. Anyone can use cheese, cream sauce, or bacon to make dishes delicious, but Chef Phil is a master of using bold flavors in meals that won't leave you feeling like you've sabotaged your health journey!
They are proud to have health-forward menus with a "better together" motivation to encourage community connections.
Chef Phillip Bauer, the “PB” of “PB&J,” is a high-energy hard worker who thrives on creating expressive, novel dishes and using food as a way to bring people together. Working against the misnomer of, “never trust a skinny chef,” Chef Phillip Bauer, who has run 7 full marathons and who ran his fastest mile in 4 minutes and 28 seconds, proves that food doesn’t have to be unhealthy to be tasty, satisfying, and comforting. He showcases his talent in the exquisite execution and acute attention to detail to enhance the flavor profile for a refreshing dining experience. He is a master of healthy, bold flavors and brightly colored dishes down to simple techniques and hometown recipes.
Phil came from an Air Force family and was active duty in the Air Force during 9/11. He found his ultimate calling as a Chef and has been in the culinary industry for almost 20 years. He brought the discipline he learned in the military and began his culinary career working in corporate restaurants, where he learned speed and other cooking skills. From there, Chef Phil found his way into fine dining, working at the Elephant Walk, and the Bay, a James Beard nominated restaurant. These work environments developed his knife work and precision techniques. Chef Phil ultimately worked his way up to several Sous Chef positions in local fine-dining restaurants including the Wine Bar, the Henderson Resort, and Bitterroot. Chef Phil was self-taught, in a proactive and diligent way, he actively sought out mentors, studied from many culinary books, challenged himself through extra practice at home, and found other opportunities to expand his knowledge, even internationally. Chef Phillip was entrusted to be an Ambassador with the Henderson Resort’s Task Force, New Restaurant Opener division, assisting with a new concept opening in Jamaica, as well as cross-training with resorts in Virginia and South Carolina. Despite the stereotype that many chefs don’t regularly cook at home, this has been a way of life for Phillip, not contained to 9-5. Chef Phillip spent many months, after both his morning and afternoon culinary jobs, coming home around 11 P.M. to do an experimental test kitchen at home. His drive and hard-gained expertise helped Chef Phillip make a name for himself and create a local following with his nightly local fish specials, ability to create gourmet dishes for special dietary needs, and starting his own private chef business.
Chef Phillip draws his inspiration from his travels, his active lifestyle, and, of course, from his wife. PB&J Bistro & Café has been a dream of Phillip Bauer & Jess since they started dating in early 2016. Within a month of dating, Jess noticed that their initials together spelled PB&J. They developed the PB&J Bistro & Café concept, which also stood for Pickling, Breads, and Jams—all the foods Phil was using her kitchen for as a test kitchen when they were dating. Chef Phillip was born in the country of Panama, in Central America, and then moved to Spain and Germany. His family ultimately ended up in Crestview in 1991 and he has remained in the area ever since. Although he has had the opportunity to visit 7 other countries since then, 5 of them with his wife. He even proposed to Jess on a perfectly picturesque brick bridge in Torcello, Italy, which is why “Dreamy Arancinis” were on the PB&J menu. His other huge influence, of course, is living on the gulf coast. He has been able to establish great relationships with local purveyors over the years, for his dishes to feature the best produce and products they can. Chef Phillip’s passion is to keep ingredients as local as possible and to build from scratch, whether that be through fermentation of vegetables, a starter dough for bread, or rolling out his own pasta. Lastly, giving back to the community has been important to the PB&J vision and they are proud to have worked with great local organizations including Destin Harvest, Destin Charity Wine Auction, Gulf Coast Sinfonia, and Shelter House.
Jess Bauer, the “J” from “PB&J,” is a whimsical, creative, people-person with larger-than-life dreams, who has always had a side hustle to help the community. In addition to her main profession, she has been a Level 1 CrossFit Trainer, a Spanish tutor, a property manager, and even an iPhone photographer. She used her passion for art and photography to create and publish her own page-a-day tear-away motivational desk calendar to support victims of human sex trafficking, spearhead a community art auction to support the Waterfront Rescue Mission, and has sold original photograph canvases to support Wounded Warriors. However, her main profession is law, where she studied at the University of Florida Levin College of Law to develop and track international human rights policies. Her summer work and studies took her to Costa Rica and Chile, living and working completely in Spanish. She moved back to the Destin area after law school to be geographically closer to her family (the Steeles) after her mom won her battle with uterine cancer. Jess began her legal practice as an attorney for the Department of Children and Families, to protect children who are victims of abuse, abandonment, or neglect. She has been practicing for almost 12 years and has served families all over the panhandle in their toughest times of divorce, child custody, and adoptions. Although it has been an honor and a humbling privilege to walk through the trenches with these families, she is excitedly looking forward to serving the community in another way: food!
Jess met her chef husband, Phillip Bauer, in 2016. She initiated, and subsequently lost, a bet on her second date with Phil, so she had to cook for him first! Jess cooked up her original take on chicken and waffles: a healthier, Asian-influenced version. Hong Kong was one of the 8 countries she’s lived in and one of the 27 countries she’s visited. The dish wowed Phil, and will be on the menu at the Café, along with other dishes that are meaningful to their relationship! Jess is in the kitchen frequently with Phil, helping out, tweaking a recipe, describing a perfect dish and challenging Phil to make it, or cooking up a dish she literally dreamed about. Just before the couple got married in 2018, Jess developed a mysterious and debilitating chronic illness, which was ultimately diagnosed as Fibromyalgia years later. She and Chef Phil tried eating different ways to help in her health journey. Through the experience, Chef Phil was able to learn to create tasty, diverse, and satisfying vegetarian, vegan, gluten-free, dairy-free, Paleo, etc., dishes. Being health-focused is still a huge priority to PB&J and nutrition is a large component of it. Jess has made huge strides in her health journey, and wants to keep improving and helping others’ progress as well! in 2023, Jess earned her Certificate in Nutrition Consulting, with the aim of helping guests on their health journeys as well. The “J” part of “PB&J” is just as integral to the Café as Chef Phillip Bauer is, as his food-loving, administrative counterpart, and life-long cheerleader!
